Satay Udon Noodles  SERVES : 2 | PREPARATION TIME 10 MINUTES | COOKING TIME 8MINUTES

ABOUT THE RECIPE 

Even I was surprised at just how quick this dish was to cook; no sooner had I started the dish, than it was on my plate and being scoffed. Washing up consisted of my wok and the wooden spoon I used. Chewy noodles, juicy chicken, crunchy onions and peppers smothered in a rich spicy satay sauce. Lovely! 

METHOD 

Heat a large non stick wok on medium high and add 2 tbsp. oil. Add the chicken and allow to brown on one side before stirring and adding the peppers and onion to soften for 1-2 minutes. Season with 1 tsp. salt and a pinch of pepper then stir in the satay sauce along with 1 cup of water. Once all of the ingredients are well combined in the sauce, add the Udon noodles and cook for 2 minutes stirring frequently to break up the noodle nests. Serve immediately. 
 
Chefs Tip: 
Add a sprinkle of crushed salted peanuts to garnish and add a lovely crunch. 
 
Satay Udon Noodles

INGREDIENTS 

300g Straight to Wok Udon Noodles 
2 Chicken breasts cut into bite sized pieces 
1 Medium white onion cut into strips 
1 Green pepper cut into Strips 
4 tbsp. Satay dipping sauce (if using Satay Sauce or Paste you will only need 2 maybe 3 tbsp. so I recommend starting with 2 and adjusting to taste)
