ABOUT THE RECIPE 

Sweet, rich, tangy and aromatic, the perfect sauce to smother your chicken in! 

METHOD 

Place wok over a medium/high heat; add oil, garlic and ginger and fry until fragrant (about 15 seconds). Add the chicken and stir-fry for 2 minutes. Add onions, carrots, water chestnuts and bamboo shoots and stir-fry for a further 2 minutes. Turn heat down to medium add the remainder of the ingredients (Except Sesame oil & cashew nuts) stir-fry for a further 2 to 3 minutes. Remove from heat, add sesame oil and cashew nuts, mix well. Transfer to serving dish and enjoy.

INGREDIENTS 

1 tbsp. Groundnut Oil 
1 tsp. Ginger, minced 
4 Garlic Clove, minced 
1 tbsp. Rice Vinegar 
1 tbsp. Soy Sauce 
1 Tsp. Sesame Oil 
2 Chicken Breast, cut into slices 
½ Cup Hoi Sin Sauce 
½ tsp. Dried Chilli Flakes 
1 Onion, cut into cubes 
1 Carrot, cut into 1cm cubes 
¼ Cup of Water Chestnuts 
¼ Cup of Bamboo Shoots 
¼ Cup of Unsalted Roasted Cashew Nuts (if you have salted cashew nuts, rinse under cold water and pat dry)
