ABOUT THE RECIPE 

Chinese BBQ Pork (Char Siu) is famous the world over; marinated in spices, the meat takes on a distinct dark red colour as it cooks. Served over Beansprouts with a rich Chinese BBQ Sauce this dish will soon become one of your all time favourites. 

METHOD 

Making the BBQ Sauce 
In a sauce pan add all of the BBQ sauce ingredients together, gently bring to the boil, then turn down to simmer for 15 minutes. Mix corn flour slurry and slowly stir in to the sauce to reach the required consistency. Remove star anise and cinnamon and set to one side 
 
Make the dish 
Heat a non-stick wok over a medium heat, add 1 tbsp. oil along with the spring onions and garlic and fry until fragrant (about 30 seconds). Add onions and carrots stir-fry for a further minute. Add beansprouts and fry for another minute, then season with oyster sauce, salt, sugar, and white pepper. Mix well, add chicken stock and bring to the boil. Once boiling, thicken with corn flour mixture by slowly pouring into the pan whilst stirring continuously. Remove from heat, add sesame oil and transfer to a serving plate, arranging the sliced pork over the top. Drizzle with BBQ sauce and serve.

1 Garlic Clove, minced 
2 tbsp. Oyster Sauce 
1 tbsp. Groundnut oil 
1 tbsp. Corn flour (mixed with 2 tbsp. water to make a slurry) 
1 tsp. Sesame oil

400g Piece of Chinese BBQ Pork (See No: 48 for recipe) 
Small White Onion (thinly sliced) 
3 Handfuls Beansprouts 
Small Carrot (chopped into slithers) 
¼ tsp. Salt 
½ tsp. Sugar 
½ tsp. White Pepper 
½ Cup Chicken Stock 
 
BBQ Sauce

1 Cup Chicken Stock 
2 tbsp Rice Wine 
3 tbsp. Corn flour (mixed with 6 tbsp. water to make a slurry)

½ Cup Yellow Bean sauce 
2 Star-Anise 
1 Cinnamon Stick 
¼ Cup Sugar
