Spicy Chicken Katsu'wich

ABOUT THE RECIPE 

Inspired by all things Japanese this sandwich is not only a taste sensation but texturally its out of this world (Soft Bun, Crunchy cabbage and Crispy chicken). 

METHOD 

Cabbage Salad 
Discard the core of cabbage and cut the rest into very very thin slices. Whisk together sesame oil, cider, mirin and light soy sauce. Season to taste. Mix this with sliced cabbage. Sprinkle sesame seeds onto cabbage. 
 
Katsu Chicken 
Place chicken breast in a zip lock bag and using a rolling pin gentle flatten out. Season your flattened out chicken breasts with salt and pepper before covering with flour first and then raw egg, then panko breadcrumbs. 
 
Heat up the oil in a separate pan and carefully lower the cutlets into the oil and cook them for a few minutes on both sides until they become a golden brown colour. 
 
Assemble Katsu'wich 
Slice brioche buns in half and lightly toast, add one the breaded chicken cutlets and top with the cabbage salad. Add spicy miso sauce to taste. 

INGREDIENTS 

4 chicken breasts 
80grams Japanese panko bread crumbs 
flour 
egg 
salt 
pepper 
vegatble oil 
To Serve 
4 Brioche Buns 
spicy miso sauce

2 tsp apple cider 
2 tsp mirin

1 tsp toasted sesame seeds
