Sweet and Sour Sauce
Place a large saucepan on a medium heat and add all the sauce ingredients, apart from the cornflour. Let the sauce bubble for five minutes.
Mix the two tablespoons of cornflour with a little cold water. Slowly pour the cornflour into the sauce, a little at a time, until you have the desired consistency. I like the sauce to be quite thick
Chicken
Heat oil on a medium heat.
Chop the chicken into bite size pieces, cover in corn flour and bang off the excess, now dip in the beaten egg and then back into the cornflour.
Gently lower into the hot oil and fry for 3/4 minutes, keep turning, brown evenly on all sides. Remove and place on kitchen roll to rest.
Reheat the sweet and sour sauce and add the chunks of battered chicken. Serve hot and enjoy!
