Wanton Soup

ABOUT THE RECIPE 

Normally these little juicy parcels are made with Pork and King Prawns but I make mine with Chicken. 

METHOD 

Peel and finely mince ginger, de-vein King Prawns and finely mince with chicken. 
 
In a large mixing bowl, thoroughly mix the chicken & prawn. Add soy sauce, vinegar, sesame oil, ginger, salt and pepper. Thoroughly mix all of the ingredients together, the filling should be sticky. 
 
In a bowl, crack open the egg and beat with a fork. 
 
Angle a wonton wrapper so that it faces you like a diamond. With your fingertips or a spoon, spread a thin layer of egg wash along the top two edges of the wrapper. Place a quarter-size spoonful of filling in the centre of the skin. 
 
One super-easy way to wrap is to form a triangle by folding the bottom tip to the top tip and pinch out as much air as possible. 
 
In a pan add broth ingredients (except sesame oil) bring to the boil, gently place in the wantons, once the wantons float to the surface they should be cooked but please check before eating. Turn off the heat and add the sesame oil. Serve in a bowl and sprinkle with spring onion. 

INGREDIENTS 

100g Chicken 
100g Fresh King Prawns 
½ tsp ginger 
½ tbsp soy sauce 
1 ½ tsp rice vinegar 
½ tsp sesame oil 
1 pinch salt (to taste) 
1 pinch white pepper (to taste) 
Egg to seal wrapper 
Wanton Wrappers 6/8 per portion 

BROTH 

Chicken Stock 
½ thumb piece ginger (cut into slices) 
Light Soy sauce 
White pepper 
Sesame Oil 
Salt (to taste) or fish sauce 
Spring Onions
