Thai Egg and Shrimp Omelette

ABOUT THE RECIPE 

Thai food is becoming more readily available here in the UK. This recipe is both healthy and quick to make - a perfect way to start the day! 

METHOD 

Whisk the eggs in a large bowl. 
 
Add all the remaining ingredients and beat thoroughly. 
 
Place a frying pan or Wok on medium heat and add the butter. 
 
Pour in the egg mixture and fry for 1-2 minutes each side. 
 
Remove from heat and serve by garnishing with parsley and tomato slices. 

INGREDIENTS 

2 Spring Onions, finely chopped 
1 Shallot, finely chopped 
5 Large Prawns/Shrimp, roughly minced 
2 Eggs 
1 Tbsp Soy Sauce 
1 Tsp Lime Juice 
2 Tbsp Butter
