Chicken Chow Mein

ABOUT THE RECIPE 

Chow mein means 'stir noodle', or stir-fried noodle. It's a classic Chinese dish of stir-fried egg noodles with thinly-sliced chicken breast. 

METHOD 

If you are using the dried egg noodles place in a pot of boiling water for around 3 minutes or until soft, drain and allow to cool. 
 
Fry chicken in a little oil and season to taste. Once Chicken is thoroughly cooked remove from pan and allow to rest for 10 minutes. 
 
Using kitchen paper wipe frying pan clean and add a dash more oil, fry onions for 2 minutes and then add chicken, bean sprouts & a sprinkle of white pepper, stir for a further minute or two. Add drained noodles and mix thoroughly (ensure heat is high). Season with salt a little sugar and a dash of soy sauce for colour. Finish with a splash of sesame oil and serve. Garnish with spring onion.

250g Egg Noodles 
1 Chicken breast – Thinly sliced 
½ White Onion – Sliced 
Handful Bean sprouts 
Salt 
Sugar 
White Pepper 
Dark Soy sauce 
Sesame oil 
Veg cooking oil 
Spring Onions – Finely sliced (optional)
