So day 2 of my journey to lose weight so I can have surgery to replace my hip and then train to get to the top of Mount Snowdon. 
 
I think the key to the success will be in the planning, especially meal planning so i don't fall off the wagon.

So the first recipe I'm going to share is one I wrote a couple of years ago for a friend of mine who is on slimming world too, the best thing about this recipe was he won a prize in his group for sharing it with them. 
 
Practically syn free Cantonese Stir Fry Sauce 
4 medium size dried shitake or Chinese mushrooms 
6 Spring Onions, cut into 5cm strips 
1 Garlic Clove, minced 
1 tbsp Ginger, grated 
1 Nori Sheet (Nori sheet ground into a powder) 
1 Cup boiling water 
2 tbsp light soy sauce 
½ tbsp. Dark Soy sauce 
1 tbsp sugar or you can use a sugar substitute. (3 syns) 
Spray Oil 
¼ tsp salt 
1 tsp corn flour (1/2 Syn) 
 
Method 
Rinse mushrooms under warm water and place into a large bowl, add 1 cup of boiling water and soak for 15 minutes until soft. Gently squeeze excess water out of mushrooms, reserve liquid for later. Remove stalk from mushroom and discard, cut mushrooms into 4 slices. Heat your wok or non-stick frying pan over a medium heat, add a few squirts of spray oil and fry mushrooms, spring onions, garlic and ginger for 3 to 5 minutes. Remove and place to one side. 
 
Place mushroom liquid, powdered nori, fried mushroom mixture, soy sauce, sugar, salt & corn flour into a blender and blend until smooth. Pour mixture into a small saucepan, gently simmer until sauce has reduced by a third and has thickened. Allow to cool. 
 
Store in an airtight container, which can be kept in the fridge for 1 week or freeze up to 3 months. 
 
Tip: Freeze sauce in ice trays and once frozen transfer to a zip lock bag kept in the freezer. Defrost as much as you need each time. 
 
This sauce can be added to a myriad of dishes from Chow Mein to Fried Rice & Stir Fried Dishes. Use 1 to 2 tbsp per portion.

Mid morning coffee with remainder of 150ml Lacto Free Milk (HB) 
 
Lunch: Fruit Bowl - Fresh Pineapple & a Nectarine and a small bowl of left over pasta 
 
Dinner: Steamed rice, spray oil roasted vegetables, dry pan seared chicken breast and light soy sauce
