Spicy Tomato Soup SERVES : 4/6 | PREPARATION TIME 10 MINUTES | COOKING TIME 1 HOUR & 30 MINUTES

ABOUT THE RECIPE 

During my weight loss journey I've been playing with a few recipes that I can batch cook and pull out the fridge as an easy go to snack or lunch. Having stumbled across a market stall selling the most amazing tomatos I came up with this simple and very delicious recipe.  
 
Another SYN FREE recipe per portion 

METHOD 

Begin by softening your onions and peppers in a couple of squirts of fry lite oil. Then add the celery and after 2 to 3 minutes add your tomatoes, a pinch of paprika and chilli powder. Pour in 2 litres of stock bring to the boil and then turn down the heat to it's lowest setting, pop on the lid and allow to slowly cook for at least 1 hour. 
 
Remove the lid and continue to cook for a further 30 minutes with the lid off. 
 
Remove from the heat and carefully using a hand blender, blend the soup until smooth. Place a sieve over another large sauce pan and then strain your soup through the sieve. 
 
Re heat your soup, season to taste with salt and pepper and serve. 
 
Want Croutons? Personally I love a bit of texture so this is a must for me. 
2 Slices of Gluten Free seeded bread, cut into cubes and pan fried in Fry Lite. Season with a pinch of salt and black pepper. You can have this as your Healthy B for the day, which means NO SYNS!!!

1 Sweet Red Pepper, diced 
4 celery Sticks, diced 
2lbs Vine ripened Tom’s. roughly chopped 
2 ltrs of Stock 
Smoked Paprika to taste 
Chilli powder to taste 
Pinch of salt to taste
