Noodles with Shredded Chicken and Bok Choi

ABOUT THE RECIPE 

Over the last year or two there has been a bit of a 15 minute healthy meal craze with several TV chefs and fitness gurus publishing cook books promoting the benefits of simple quick cooking. This practice has actually been used by East Asians for centuries, it isn’t new, we didn’t just have a eureka moment, this style of cooking is in our DNA. We all know the benefits of a healthy stir fry, locking in the nutrients and the flavours of the ingredients as we toss them away in our woks, so here’s a healthy speedy recipe that packs a punch on taste. 

METHOD 

Add soup base ingredients to a large saucepan, bring to the boil, once boiling turn down the heat and allow to simmer. 
 
In another large saucepan boil 1L of water, add noodles and cook until soft. Drain noodles and place into your serving bowl. Add bok choi to the simmering soup and allow to cook for 1 minute. 
 
Place shredded chicken over the noodles, now pour over the soup ensuring noodles and chicken are covered. Carefully add your bok choi and sprinkle with the spring onion. Finish with a splash of sesame oil. 

INGREDIENTS 

2 Nests of Soba Noodles 
1 Cup cooked chicken shredded 
1 Bok Choi cut into quarters 
1 Spring Onion Finely Sliced 
Sesame Oil 

SOUP BASE 

1L Chicken Stock 
1 tbsp Light Soy Sauce 
1 tbsp Oyster Sauce (optional) 
½ tbsp. Fish sauce (optional) 
Salt to taste 
White Pepper to taste 
3 slices Ginger
