Chocolate Chip Cookies

ABOUT THE RECIPE 

These yummy chocolate chip cookies are a favourite with kids, but hide them from the grown-ups or there'll be none left! 

METHOD 

Preheat the oven to 180C. 
 
Using a rolling pin, beat the bars of chocolate in their packets until broken into small pieces. You can use chocolate chips but I enjoy the noisy beating process!!!! 
 
Cream the butter and sugar until pale, then beat in the vanilla and egg. 
 
Gradually beat in the flour, cocoa powder and baking powder but don’t over beat. 
 
Stir in the chocolate pieces. 
 
At this stage you can add any additional flavours such as chopped hazelnuts, peanuts, fruit pieces, pecans…. just add them to taste and mix in. 
 
Line a baking tray with greaseproof paper and using a tbsp, scoop the cookie mixture on to the tray leaving enough space between each blob for the cookies to spread whilst cooking. Gently press the cookie mounds down to even them out before placing in the oven to cook for around 12 minutes. Once cooked, the cookies should have spread and looked slightly cracked on top. 
 
Remove from the oven and slide the baking paper on to a cooling rack and leave to cool for as long as you can manage before tucking in!!!

100g soft butter 
150g castor sugar 
1 tsp vanilla extract 
1 egg 
150g plain flour 
35g cocoa powder 
1/2 tsp baking powder 
100g milk chocolate 
100g dark chocolate 
(or mix it up and go for a milk / white chocolate combination)
