Chinese BBQ Ribs: Aromatic, Tender, Unctuous, Sticky, Sweet and oh so familiar to every Chinese Cantonese Takeaway around! 
 

METHOD 

In a large bowl, place the ribs with all of the ingredients except the golden syrup and massage into the meat. Cover and allow to marinate for at least 2 hours or overnight in the fridge. 
 
Remove ribs from the fridge and allow to come back up to room temperature, at the same time pre-heat your oven to 170c. 
 
Give the bowl a good toss and tip the ribs and any marinade that will have pooled in the bowl onto a large baking tray. Place in the oven and bake for 40 minutes, then turn heat up to 185c, baste the ribs and return back to the oven for another 10 minutes. Baste again and return back to the oven for a further 10 minutes or until the ribs have begun to brown and even char a little. (If you like your ribs meat to literally fall off the bone, increase the first part of the cooking time to 1 hour before you start basting) 
 
Remove the ribs from the oven and allow to rest for 15 minutes, then transfer to a serving plate and drizzle over the golden syrup.

1kg Ribs 
3 Star Anise 
2 Cinnamon Sticks 
1 ½ cups Chinese Barbecue Sauce (See Recipe) or use store bought. 
¼ cup Golden Syrup
