#7 Road to Snowdon - Syn Free Chow Mein Recipe

Day 41: Sunday 19th September 2021
Day 41 and I have now lost 1 stone and 10 pounds. Well on my way to my 5 stone target.
Feeling very good on this new healthy eating plan, finally my mind is in a good place and I've been able to make small changes every day and it really is becoming a new way of life for me. I can sympathise with all of you out there that have yo yo dieted for years as this was me. Something has clicked in my brain and I really don't feel like i'm on any plan.
So all I can say to anyone out there struggling to start or stay on a new healthy eating regime is, don't stop believing in YOU. You are the only one who can make the changes.
Left over CHICKEN CHOW MEIN
2 Nests of dried Egg Noodles (No2 - Thin ones or No1 - Thick ones)
1 cup of left over roast chicken (or you can use whatever protein you want)
1 Small onion, cut into thin slices
1 tbsp Light Soy Sauce
1/2 tbsp Dark Soy sauce
1 to 2 tbsp Oyster Sauce
Spray Oil or 1/2 tbsp Vegetable Oil (3 syns)
Place nests of noodles into boiling water for 1 minute until softened (2 to 3 minutes if you are using the thick noodles), drain and then lay on a clean tea towel spread out to air cool and dry.
Heat your wok and once hot add oil and onions, after 1 minute add chicken and cook until piping hot, now add your cooled noodles. Give everything a good mix and then allow the noodles to char a little, now add your soy sauce and oyster sauce. Combine and serve.
