How I Lost over Half a Stone in One week
Day 20: Saturday 28th August 2021 
Day 20 weigh in: a little earlier than last week as i'm away on Sunday. 
It's been a fantastic week, I feel lighter, I feel slimmer, my clothes hang differently and it doesn't feel like i'm dieting. I think i've finally after years and years and years got my head in the right place. It's simply making healthy choices and planning. 
Starting Weight: 
23 Stone, 13 pounds and 3/4 
Day 7 Weight: 
23 Stone 6 pounds 
Day 14 Weight: 
23 stone 4 pounds 3/4 
Day 20 Weight: 
22 Stone 12 pounds & 1/4 
Total weight loss: 1 Stone 1 pound & 1/4 
Tomato and Basil Soup 
Fry Lite Oil 
1/2 Onion, diced 
1/2 Red Pepper, diced 
4 celery Sticks, diced 
2lbs Vine ripened Tom’s. roughly chopped 
2 ltrs of Stock 
Large Bunch of Fresh Basil, remove stalks 
Pinch of salt to taste 
Being by softening your onions and peppers in a couple of squirts of fry lite oil. Then add the celery and after 2 to 3 minutes add your tomatoes. Pour in 2 litres of stock bring to the boil and then turn down the heat to it's lowest setting, pop on the lid and allow to slowly cook for at least 2 to 3 hours. 
Remove the lid and add your basil leaves, continue to cook for a further 30 minutes with the lid off. 
Remove from the heat and carefully using a hand blender, blend the soup until smooth. Place a sieve over another large sauce pan and then strain your soup through the sieve. 
Re heat your soup, season to taste with salt and pepper and serve. 
Want Croutons? Personally I love a bit of texture so this is a must for me.  
2 Slices of Gluten Free seeded bread, cut into cubes and pan fried in Fry Lite. Season with a pinch of salt and black pepper.
