STARTING WEIGHT: 23 stone, 13 pounds and 3/4
Day 7 weigh in: 23 stone, 6 pounds
Day 14 weigh in: 23 stone 4 pounds 3/4
Total weight loss 9 pounds
This week I only lost 1 pound and a 1/4
The problem wasn't with what I was eating, it was quantity. My portion size must be too big still. Bugger!
My Super Duper Soup Recipe
2 Poached Chicken Breasts
Simply place your chicken into boiling water for around 10 minutes. Once cooked drop into iced water, this will stop chicken cooking any further. Once completely cooled shredded chicken and leave to one side.
3 celery stalks, 1/2 cm dice
4 Carrots, 1/2 cm dice
1/2 onion, 1/2 cm dice
1 potato, 2 cm dice
4 sprigs lemon thyme
2 spring onions, finely chopped
Mushrooms, halved or quartered
2 Ltrs stock
1 Tin of Baked beans
Macaroni shells last 15 minutes
Spray oil
Salt
Black pepper
Heat a large saucepan with a few squirts of spray light oil.
Add onion and being to soften, then add spring onions, followed by carrots and then the potatoes. Then add your thyme
Mix 2 litres of boiling water with 2 stock cubes and pour over your vegetables, add your tin of baked beans and slowly bring to a simmer. Turn heat down to its lowest setting and cook for around 45 minutes with the lid on. Remove the lid and add your macaroni. Once tender season with salt and black pepper.
