Fillet Beef with a Ginger & Coriander Crust

ABOUT THE RECIPE 

This great recipe featured in Horse and Countryside Magazine - June/July 2016 Edition. Enjoy! 

METHOD 

Marinate beef in light soy sauce for 40 minutes and then pat dry. 
 
Rub beef with mustard and ground ginger. 
 
Place coriander seeds in a zip lock bag and bash with a rolling pin. 
 
Add garlic flakes, sea salt, and pepper corns, panko bread crumbs to zip lock bag and mix well. 
 
Roll beef in spice mix to form a crust. 
 
Drizzle beef with olive oil and cook over a medium heat in a heavy bottomed pan or griddle. 
 
Cooking times vary to preferred taste

1.2kg Fillet Beef 
125ml Light Soy sauce 
2tsp Ground Ginger 
2tsp Sea salt 
2tbsp Mustard 
8tbsp Coriander Seeds 
2tbsp Garlic Flakes 
3tbsp Panko Bread Crumbs 
1tsp Ground Black Pepper 
1tsp freshly ground Black Peppercorns 
3tbsp Olive Oil 

KWOKLYN'S COOKING TIPS 

#1 Use a heavy bottom pan which will retain the heat. 
 
#2 Prep all ingredients before you start to cook. 
 
#3 Always make a little too much as all of these recipes will have you going back for more.
