ABOUT THE RECIPE 

Finely minced chicken stir fried with water chestnuts, ginger, garlic and spring onion, served in crisp Iceberg lettuce leaves... 

METHOD 

Separate the lettuce leaves trying to keep them intact, the best way of doing this is to wash the lettuce under a running cold tap, as the leaves fill with water they peel (intact) away from the lettuce. 
 
Gently heat 1tbsp of oil in a wok. Add the garlic, ginger and spring onions and fry until the ginger and garlic are aromatic. 
 
Add the chicken and cook until browned. Remove from the pan and set aside. 
 
In a small bowl mix the soy sauce, oyster sauce, rice wine and sugar. 
Into the wok add the water chestnuts and cook over a medium heat for 3 to 5 minutes or until slightly browned. Add the soy sauce mixture and mix in well. 
Place the mince mixture back into the pan and cook over a medium heat until the sauce is reduced and the mixture is quite dry, add the sesame oil and mix well. 
 
This next part is optional, and is used as a garnish and also a texture addition. You take a handful of vermicelli rice noodles and deep or shallow fry in a pan with oil and they will puff up! Then drain on some kitchen paper and lay on the serving plate. 
 
To serve spoon some of the Yuk Sung and fried vermicelli into a lettuce leave, wrap and eat!

INGREDIENTS 

1 iceberg lettuce 
1 tablespoon of sesame oil 
1 tablespoon of vegetable oil 
2 garlic cloves finely chopped 
3cm of fresh ginger – peeled and sliced finely 
2 spring onions, finely sliced 
500g of minced or diced chicken 
220g can of water chestnuts chopped into very small pieces 
1 tablespoon of dark soy sauce 
2 tablespoons of oyster sauce 
1 tablespoon of rice wine 
1 tablespoon of sugar 
Handful of Vermicelli 

KWOKLYN'S COOKING TIPS 

#1 Use a heavy bottom pan which will retain the heat. 
 
#2 Prep all ingredients before you start to cook. 
 
#3 Always make a little too much as all of these recipes will have you going back for more.
